Adult fiction is very vague. My top recommendations lately:
Gentlemen and Players, by Joanne Harris
Life of Pi, by Yann Martel
The Kite Runner, by Khaled Hosseini

"Adult fiction" is a pretty broad category.
When I run out of reading material, I go to Amazon.com and I search a few titles of books that I've already read and read the comments from other readers - they will often suggest other books that are similar. Or look at the suggestions of what people who bought that book also bought. Then go to your public library and check out the book.
Or, go to your public library to begin with. Most public libraries have what's called "reader's advisory service." Tell the librarian the titles of a few books that you have enjoyed. He or she will be able to suggest some others in the same genre.

ANY James Patterson book, I just read Judge and Jury his latest on a scale of 1-10 Id say it was an 8.5. IF you really enjoy reading pick up 1st to Die it is a series the rest in that series are 2nd chances, 3rd Degree, 4th of July and 5th Horsemen, these books are so good I'd hide in the bathroom at work just to see what was going to happen

"The Children of Men" by PD James. It's a great book about the sterility of men and the possible end of the human race. (not science fiction). It gives thought provoking ideas on religion, social order, and general humanity without being over-barring. Actually, I think they are making it a movie soon! But it's been in my top five reads for years now. Worth it.

Bartimaeus Trilogy if you're interested in that sort of fiction. It's about a djinn and a boy that conjured him, it was awesome.
The Artemis Fowl series was awesome, which is another series about a boy genius who wants to get into a fearie world. It's actually a lot better then I made it sound.
Or if you aren't interested in that try L.J. Smith "The Forbidden Game" trilogy. The hunt, the chase, the kill. It's about a girl that gets kidnapped by a shadowman. L.J. Smith's books are out of print and you'd have to get them off of amazon.com but totally worth the money and the wait.

I am a huge Robin Cook fan (science fiction - but not over the top with zombies, more like medical) My favorite is Acceptable Risk. I like Nora Roberts for romance. Try the Three Fates to start .
