we as a species are lactose intolerant. The ability to digest lactose in adulthood came from the harsh cold winters in Europe where food was scarce, and one of the only food products available were dairy products. The small percentage who could digest dairy did better, and of course reproduced more. We can assume that early humans were not able to digest lactose because we know this, and the fact that aside from Europeans, the rest of the world is pretty much lactose intolerant. This is a pretty quick answer, but I did do a paper on this (different dietary needs based on ethnicity). There is some research out there, and you could find more information if you wanted to.
