The key is knowing the partner well and wanting to share something beautiful with that person. It is a matter of desire, but more than "raw" desire. Sure, you can have great sex based only on "raw" desire -- I have -- but those experiences pale next to the ones where the emotional bond was celebrated through a beautiful passage together. open communication between the two partners. openly ask you partner to do what pleasures you. it adds to the heightened pleasure of the sex act. don't be afraid to try new things, but if you're not comfortable with a request, express that feeling and expect your partner to respect your feelings.
after 34 years of marriage, my wife and i have tried just about anything, except anal sex. she is not comfortable with this sexual practice and i repsect her for being honest with me.
we've tried many different positions, role playing. sex outdoors, elevator sex, etc. it all add spice to our sex life.
again, the key ingredient is MUCH open communication between the partners.

passion, love, respect and caring. and well foreplay too. but sex is definitely a balancing act because you have to know what they want and need for their pleasure but also satisfy yours as well. great sex is when both people are done and are both satisfied. :D
