Do you mean the interactions? Christianity and Islam first conflicted during the Crusades when Europeans under the banner of Christianity invaded the Holy Land in order to seize it for themselves. Christian pilgrims had encountered Muslims on pilgrimage since the foundation of Islam in the 7th century. During the period in question, you can argue that Christianity and Islam were really used as fronts for nationalistic movements with designs on the holy land throughout this entire period. While the Christians have opted to sit out of most of the modern conflicts in this region and have lost their nationalistic flare, to some degree, they were a main player back then. What drives people to madness as completely as religion?

I can't tell you much, but as soon as the Christians and Muslims had carved out their general dominons (it all took a little while to sort itself out after Rome went down) they got straight to Crusading. Afterwards they made a semi peace because Europeans needed to go through Muslim territories or traders to get to India and China.

First, the Muslims attacked the Christian Byzantine Empire, and destroyed it, then they attacked Romania and Austria from what is now Turkey, while attacking France from Spain. The Christian response was the Crusades, because if they are fighting on their turf, they can't burn your cities.
