It is just a society moral issue. In the US and most European nations it is considered taboo. In some African tribes it is still done.
The main reason you shouldn't is that if the human died of a disease or illness the illness can be passed one through eating the flesh, cooked or not. In the tribes that still eat the dead as a passing ritual there have been major outbreaks of an illness very similar to mad cow disease (mad cow is passed on the same way, cows eating cows). Whole tribes have been wiped out because of the ritual.
By eating meats like poultry and beef we usually do not get the disease in the meat since we are different species and the disease is not set up to attack us. In humans they are.
Doesn't matter anyway. From research within the tribes that have cannibalistic rituals they all say that human flesh is not good taste wise. It is just a ritual they do and would not eat the flesh if it were not for the ritual.

It is illegal because the laws in this country, and most others, are designed, not only to uphold justice, but to enforce public policy. As a culture, many people feel that it is simply wrong to consume corpses. It is taboo, and as a reflection of that the law made it illegal.
