Yesterday this guy sent me an email saying that he thinks we should hang out more together and was being real sweet walking me to my second period class and all and being very complimentary. Then today he just kinda ignored me for the most part and was just acting like he usually does.. what is the deal?

He may be waiting for you to make the next move. I wouldn't though. Just smile at him and make him "want" to talk to you again.
Another idea. Are you a freshman, or is he a senior or in a grade above you? Beware! Sometimes kids at school try things like this on a bet. It is sad, but true.
