The projection of KI or CHI can basically be braught back to a mental state. The underlying Idea is to project the energy from ones tan tien or hara(the centre point just below your navel) outwards. Physically it involves not giving any resistance to any pressure but to relax absorb the pressure using your entire body and send it back towards your opponent. The Idea of Projecting Chi is a mental aide towards this goal.
It really is the easiest way of putting this into words it's really something you have to experience

Everything is made from energy, and there are some forms of energy that go beyond our range, like the energy that produces auras which can only be seen with certain equipment.

Because we are living in a finite environment (the world is only SO big), everything must be connected to something in some shape or form.

The string theory and the idea that all things share a common connection or energy source can explain how one particle activates another, the energy of the mind is basically unformed energy, but it is the same as solid state energy that forms the world around us.

This, by having a tuned mind and harnessing 'chi' could explain the ability of true telekinesis...

... But chances are that the majority of such things happening are all in the mind, and the physical world is much more of a reality than any pseudo-science.

Periodically one hears claims of martial artists moving objects and/or people by "projecting chi". A claim from some Aikido and Taiqichuan exponents is that they can "throw someone without even touching them". Australian Taiqichuan Master and avowed sceptic Earl Montague basically threw down the gauntlet on this over ten years ago: "So throw me without touching me". No takers so far as I know.

A common response on any challenge to measure or observe the effect is on the lines that this somehow disturbs the power - so they are on safe ground really!

I don't dismiss the concept; in many years of martial arts, Eastern and Western, I have used it myself. But it is just that: a concept, or a frame of reference. I've met, and been taught by, some pretty amazing martial artists, but none has ever done anything to me without physical contact.

It's not supposed to be scientific!
It's spiritual.
And if it could be proved by science then the martial artist would not just be claiming to be able to produce it would they.?

Since there is no scientific evidence that chi
exists at all, there can be no scientific explanation
of how it could be projected.

I would think this is not scientificaly provable but just part of their beliefs. Think of it sort of like "The Force" in Star Wars.
