It is her way of telling the Americans to believe what they like. If the reporters ask her a question that she does not want to answer, she merely says 'That's my London Bridge', meaning as I have just said 'America believe what you want'.
The reason I would suggest is that when some Americans bought London Bridge they thought that they were getting Tower Bridge, the one that has hydraulics to raise the bridge when a ship is passing underneath. They believed what they liked and the mistake continues. I bet that when visitors visit the London Bridge re-erected in America, they believe they are visiting Tower Bridge................

It's kind of stupid because the London Bridge is just a flat, uninteresting bridge. If she is mistakenly referring to the TOWER Bridge, the fancy one with the two towers, then she's just pretty dumb to be singing about the wrong bridge. Duh.
