on a bolillo(French roll) that's been toasted and has a layer of refried beans and then the whole thing's topped off with some melted cheese. I once found it on the menu at a Denny's in Guadalajara. Is there a Mexican restaurant in San Diego that serves this?

Ranchero's in North Park, San Diego, sold breakfast molletes in the past, at least. I took my son there throughout his growing years--1987 to approx 2003. He still went there once or twice after I moved out of state to help my grandpa & mother. The couple running that North Park Ranchero's place split up. The ex-husband opened another Ranchero's in Ocean Beach, San Diego, about 2007 (?) and still sells these (as of 7/2/2015.). I go there when I am in San Diego because I love breakfast molletes. You have to ask for the egg on it because that is not the normal way it's made. They did serve it with the egg on the breakfast menu when they were in North Park. I'm not sure if the ex-wife still runs Ranchero's in North Park or not. I think it's still there, though. You should look them up online. The menu for the OB Ranchero's is online.
