A gift card from Home Depot or Target or Wal-Mart would be enormously practical. But if you don't want the couple to know exactly how much you spent, of course that would ruin the mystery! Some other ideas:

a nice blender or food processor
a slow cooker (crock pot) -- everyone should have at least 2!
a chic set of wine glasses
a set of baking pans

Kitchen and bath linens are always appreciated since they are practical, & useful, as well as decorative.
A fancy 8 by 10 photo frame to display their wedding photo.
Take along a disposable camera, and take candid shots of the wedding...surprise shots..the kind others will miss. Have the film developed and send them the photos organized in a pretty album.
A welcome sign for the front door, with their name on it.
How about a gift certificate for a grocery store? That would be practical and different.
Depending on how fancy the shower is, you could purchase a nice laundry basket, and fill it with detergent, fabric softener, spray starch, Shout, etc. Sometimes just getting the basics which no one else thinks of really helps out. The basket can be wrapped in cellophane with a fancy multicolored ribbon.

i take it you mean the couple didnt register for gifts? Yeah i had a friend who didnt register either cause she doesnt think. I got whatever I knew she needed and what i thought was nice.
I got my friend nice ralph lauren sheet sets, a comforter for the bed (cause i knew they only had 1 sheet set so far). I also gave her a blanket i hand crocheted. In addition my mother gave her a expensive crystal dish (more decrotive than for using). Also I wrapped a bunch of little gifts on a large serving tray (used a large clear gift wrapping bag and ribbon). I also put little wedding cake looking candles and nice scented candles in the tray.
So if you know these people well, whom are getting married, buy nice things you know they need. (like nice sheet sets (i bought ralph lauren and a RL comforter, glasses, dishes, appliances like blenders, toaster oven, microwave) Then also added in little nice things like scented candles, scented oils, etc.
Basically gifts are all about presentation.
Wrap each gift in a nice silver or wedding patterned wrapping paper. Then buy a cheap basket that looks nice and put all the items in the basket. Then buy a large clear wrapping gift bag and put it over the whole basket and tie it closed with nice ribbon. Doing something that simple will make your gift look more expensive and/or like you put a lot of time and caring into your gifts.
Side note: I gave my unregistered friend more gifts than everyone else including my friends relatives. Most people just give money or gift cards in an envelope but people enjoy watching the bride open gifts and the bride and groom will enjoy opening actual gifts.

now days most couple live together before they are married and have a home established or an apt. so they do not need any gifts. when a person does not have a wedding list it is there tactful way of saying they want money. they could be saving up for a house or something, and that is why they want money.

for my friends engagement present I made them up a basket, so maybe you can take some of these ideas with you. I figured that for a little while they aren't going to have a lot of money, so I figured if they'd want to stay home one night, they could use a fondue set (and a fondue cook book), bought them some nice wine, crystal flutes and some body paint. Or if they want to go out, I bought them gift certificates for dinner, one for a romantic place that I knew they hadn't been yet, and then each of their favourite restaurants.
If you know what kind of appliances they need or have buy them something like a coffee pot, blender, toaster, salad spinner, toaster oven, mixer, coffee bean grinder or a mini food chopper.
Or just get them some nice serving platters or baking dishes.
If you don't remember or know what they have or need, remember to get a gift receipt!

There is no better gift than cash and a nice card expressing your sentiments. The most practical present is cash, because the newlyweds will best know what is practical for them.

I would say get them a gift certificate for a store they live near that way they can chose their own present- instead of getting something they already have or have no use for! Or get them a nice gift certificate for a fancy restaraunt in the area!

Go to a store, and first of all, see how much money you can spend, and buy something practical, for the kitchen maybe,
but I may tell you, if they like you, it´s not important WHAT you give, as long as you give it with love.

The best thing in that case would be a gift certificate to a merchandise or popular store. It's a safe way to not fice the wrong thing!

Buy them two matching beach towels with a bottle of sunscreen or a gift certificate to their favorite store
