They have different jobs. Cheek epithelial cells are just like many other surface cells. They protect what's underneath them and keep bad things out. Muscle cells perform a completely different job inside the body and must be long to be able to contract.

not sure what function cheek cells perform, but obviously the structure of a muscle cell is designed to contract, and i expect muscle cells would have a lot of mitochondria for producing ATP for the energy needed in exercise. see if you can get a diagram of both cells to give you clues.

Because they are very two different kinds of tissues. There are 4 types of tissues : Epithelial, muscle, connective, and nervous tissues....Thus, each kind will have diff task or function ==> They have to have diff shape.
