Its a common phrase, short for "No strings attached" This means without obligation. With no conditions.
So its basicaly saying just once and I don't want to see you again, I don't want to be your girlfriend.
She is saying just because I have sex, she doesn't want to be oblidged to do anything else. She doesn't want to date more.

It doesnt have to mean just once ... i knew a woman lawyer who was so busy she didnt have time for romance but craved a good night of passion when she did have occasional time ... but didnt want the complication of a needy man ha ha
