I'm specifically looking at noble households in the past (19th Century and before), such as that of a Duke. I know the Steward was pretty high up in the servants heiarchy, but would like to know what everyday duties would have involved.

The House Steward was an administrative position. Think General Manager, and you have a pretty close correlation. He was in charge of the keys, which mean he and he alone had access to the pantries where food was stored, to the wine cellars where the wine was stored, and to the storerooms. The people who needed to access these areas had to ask his permission. He would let them in, then lock the door after they were finished. This was to control pilferage and looting.
He was responsible for making sure repairs were carried out, that seamstresses were hired to make or repair the clothing, that there were enough laundresses, and that the stables were in good condition. In short, he managed the affairs of the castle.

The house stewards are pretty much what we call butlers (or head butlers as the case maybe) today

Got to boss everyone, see that all was done just as there head mistress or master of the house liked it, all cooking, cleaning, guests comforts was his duties to make sure they got done by the other staff members

A Steaward was in charge of the entire house - kind of like a CEO of a company - he told everyone what their duties were, handled supplies, etc.

His job is to manage all the servants and make sure everyone does their job and everythin is in place.
