Over see the daily operations and functions of the company, if its an IT operations dept, monitor the servers, make sure the system is functional look up the job title on MONSTER and see what the functions are

It depends a lot on what industry it is. An ops consultant for an IT company (or division) can be very different than one for say Toyota.
