I would say bringing 500 dollars/euros cash would probably not be a great idea... I would suggest bringing 200 cash and using your plastic for anything extra... Most restaurants and shops will accept credit cards (visa/master/aex) and there's ATM's all over the place...
The weather could be great in june (between 25 and 35 centigrade) or it could rain continuously... no way to tell until next june...
Depending on your habits, clubbing will cost you between 50 and 100 euros a night per person, could be more if you drink a lot, could be less if you don't...
Restaurants range from 20 to 40 euro per person roughly, but of course there's exceptions...
My personal opinion; Try The Hague (Den Haag) instead of Amsterdam... Same pretty old buildings, great museums and shops, BETTER and cheaper restaurants, but less clubs... I think Amsterdam is an overpriced tourist trap....

June is a great time. The days are starting to become longer (more day light to sight see) and the temps aren't that bad.
If you don't plan to buy much $500.00 should do, however remember the Euro is stronger than the dollar (about $1.23 to 1 Euro), also they have a VAT tax that can be a killer!
For buying those little trinkets, the further you get from Central Station the cheaper it gets! Also avoid gift shops that are connected to tourist places. While the airport has lots of shops, it's also one of the most expensive places.
Also remember that free drink refills are American! When over there, you will pay for every coffee refill!
As for carrying cash, keep it in your front pocket!!!! Like most larger cities, they have a lot of pick pockets. I keep my larger bills in my left pocket and my smaller ones in the right. This way you never flash your money.
Also you can often save $$ by not eating in the hotel! My hotel wanted 20 Euro for breakfast, however local places were less than half.
Little warning, watch out for fake Delft! Most of the tourist shops sell blue & white stuff made in China. The Netherlands does not require "Made in ____" labeling. Real delft is not cheap.

Amsterdam is nice in June, although the weather me vary from nice and warm to pouring rain, each year is different.
Going out in Amsterdam is not so cheap. An average glass of wine costs avg. 3 euro and a beer avg. 2,50 euro. and these are the small once, larger beers go for 4.5 or 5 euro. this are the prices this summer, I think it won't change that much,but just in case.
An average lunch is about 12 euro and dinner 15- 25, depends on where you would like to go. For clubs the average entrance fees are 15- 25 euro and the drinks are usually even more expensive.
Good sushi you can get from Teppanyaki Nippon, they are at Reguliersdwarsstraat, from Monday - Wednesday they offer sushi all you can eat for 18 euro and the quality is great.

I think June is usually pretty hot. I've been to Amsterdam quite a few times, best time I went weather wise was April, quite hot in the day but nice and cool in the evening.
It's quite expensive but not as expensive as London or New York.
If you like good food see if you can find the Tibetan restaurant in the red light district, good stuff.
If you're going to smoke weed there, don't go to one of the big cafes around dam square, they're big commercial and a bit nasty, you'll find somewhere nicer on the side streets.
Museums...
Van Gogh museum is great, theres another museum that is just around the corner from the Van Gogh museum that's ment to be really good. It was closed last time I was there.
Torture museum is rubbish, Sex museum is pretty funny, weed museum is nothing special.
Schiphol airport is very big but it's easy to get around and you can get good sushi there and the internet is quite cheap if you've got time to kill there.

Been there several times and I have to say to stay out of the tourist traps (like most things down Damrak which is the street straight in front of you coming out of Central Station) for eating and shopping both. We go where the locals go and the food and the prices for shopping are better.

June will be nice, weather-wise, but crowded.
You don't need to bring much money, as you can pay for most things by credit card and/or get money as needed from the ATMs, which are all over town.
