sounds like your timing is too advanced does it ping at that high of a rpm??? if so your fuel is detanating...aka spark knock..set it at 13 with premium gas 10 with regular...i'll bet thats whats wrong with it..and if it's a stock mustang it stops pulling at 5600..no need to take it to 6000 rpm...and your pcm is set at 6100 for your rev limiter..plus it is a hydralic roller motor...taking that high only floats the valves

JAREAD may be correct. That what it seem like. The Engine generates a lot of heat. 5,000 F type stuff in the cylinders. Check that Belt to be sure, odds are it would squeal on you. Your Thermostat may not be responding quick enough for the acceleration and Temperature rise. May try a real good one and not stock. You do need it or the Computer go into a loop circuit, thinking the engine cold and will Flood with fuel when you Idle.
