A must visit in is the Tea plantations. There are the Boh Tea plantations and Bharat Tea plantations.
On the way up, there are the Robinson Waterfall. Quite nice for a short break up the old winding road. Another break point is the Sam Poh Buddhist Temple which has a wall murals and a pagoda where you can climb up for the view.
Up the highlands, there are lots of vegetable and flower plantations which supply a couple of market which has stalls with these fresh produce. You can even buy fresh cut flowers such as roses and everlasting flowers for you loved ones. There is also an Apiary selling fresh mountain honey. Nearby is a butterfly park.
At that time of the year, it can get quite wet and slippery, possibly some landslides also. But weather should be very nice and cool/cold.
A nice drive plus a short walk will bring you to the summit with a small stone table at 6666 ft above sea level. There is also a lookout tower there.
Other nice activities would be a nice jungle trek to the Parit Waterfalls, or for the small kids to play at the playground.
Steamboat dinner in Brinchang is lovely in the cold weather. There are a few popular and value for money ones, and eat lots of fresh vegetables.

ET+65 given you a very detailed answer [ wonder he/she from CH ? ], though like to add something, December is going to be raining season hence you might not be able to go up there or stranded up there not able to come down due to the land slide ! also its during school holiday/peak season n difficulties getting accommodation !
it would be better if you can drive there yourself, along the way you could stop at Kuala Woh[ hot spring ] a short drive just after Tapah. Then come Lata Iskandar [ better or bigger than Robinson Waterfall ] with some stall selling souvenir/fruit as you approaching Ringlet[ first stop of the three major town in CH ]. beside tea plantations at Tanah Rata, you should not miss the Strawberry Farm, Cactus Valley, Butterfly Garden, Rose Valley at Brinchang !
Yes, steamboat is the must have under the cool air of CH ! if you avoid December then i am sure an exiting n pleasant trip should await you !
