If you want some truly excellent Thai food, try Lotus of Siam. It's regarded by many as one of the best Thai restaurants in the country. Their lunch buffet is pretty cheap and their dinner is pretty reasonable too. For dessert, try the mango sticky rice thingy. It is awesome. It's on Sahara several blocks east of the strip.
Oh! If you're in the mood for Italian, goto Pasta Shop and Ristorante. Their pasta is homeade and really really fresh. The prices are reasonable there as well. It's on Tropicana and Eastern several miles east of the strip.
Both these places are off strip and are in strip malls. Lotus is a hole in the wall, Pasta has this kitshy art thing going on, but nothing too special. These places are all about seriously good food, not atmosphere so don't let the bland decor turn you off. :)
I don't think I've taken a trip to Vegas without eating at these places.

Rum Jungle at Monterey Bay was awesome. They make great gourmet pizza, and the walls are covered with different rums. Needless to say the drinks were fantastic. It looks like an awesome night scene too, as they had dancing cages dangling from the ceiling. The food all had a Hawaiian/Pacific theme. The wait staff all seemed like cools dudes. Check it out. Let me know if you have a similar experience, because I just ate lunch there. I want to go back and check out the night scene.

The Bellagio Sunday Champagne Brunch Buffett is incredible. We sat there and drank enough Champagne to probably get our money's worth, ate a ton of food. Then outside, overlooking the garden with my best friend, I ended up with a fiancee. She and I decided to get married that day.
From my Blog:
Went to Las Vegas over the weekend of the 31st of March, with Denise. She bought us tickets to the Carlos Mencia Show for my Valentine's Day present. We had Dinner Reservations at the House of Blues before the show. Saturday morning, okay, I lied, Saturday afternoon, we went to the Champagne Brunch at the Bellagio. We ate and drank more than $62 worth. Afterwards, we walked around the Bellagio, looking at the glass art and gardens. We then went out front on the Terrace, overlooking the drive and fountains.
The conversation started normal, but soon became pretty intense, emotional. I looked down at the face of the most beautiful woman I have ever known, have ever seen. I knew at that moment I loved her as more than the best friend she had become. For no reason, out of the blue, I asked her to marry me. As soon as I asked, I felt the dread hit me, fear. She had never once made the slightest remark that showed any level of love over friendship, except the occasional remark that she hoped we could become something someday. For the longest second of my life, I stood there holding her, looking in her eyes, feeling the most immense fear I ever felt. I was not prepared for the rejection that was soon to follow.
It is amazing how much can occur in less than a second. I took everything in and panic set in on me. I saw the tears swelling in her eyes, I realized how short a period of time we really knew each other. I knew that the tears were going to signify the end of our friendship. I had stepped over the line. I had asked my best friend and lover to be my partner for eternity, without her loving me. I had just lost my best friend. Then her head started to move. She was nodding through the tears. Her smile was bright and beautiful. Then at the moment that she said, "I love you.......Yes," church bells began to ring in the distance, music started playing and cannons exploded. The water show had begun. Coincidence, yes. Could Hollywood have choreographed that any better? Never. It was fate and destiny that I would ask her and she would answer at that moment in time, and the Bellagio would bless our engagement. She was more surprised at her answer than she was at me asking.
I went to Las Vegas with my best friend. The person I would rather spend time with over anyone else. I came back with the most incredible, loving, smiling fiancee. I love you, Denise. Thank you. Thank you for being everything to me. For having been there for me all these trying times lately. I look forward to an eternity of making you happy. Dedicating every moment of my life to you. We were married on 4 August 2006.
