The city speed limit says 35 mph. The new BMW goes through town at 35mph. Nobody stopped it. Then a beat-up buick with a bumper sticker that reads "I am a minority" rides through town, windows down, music playing, at 35mph. The cop decides to stop it anyway and check it out.

A police officer pulling over a black or hispanic person on a highway would be an example of racial profiling. The reverse is also true: an officer could stop a white person in a nice car in a "bad neighborhood" assuming they are there to buy drugs or pick up a prostitute.

An example could be searching every person at the airport that looked middle eastern. Or an actual example:
Many people blamed racial profiling for the shooting of Amadou Diallo by the New York City Police Department. The officers involved claimed they had mistaken Diallo for a wanted rapist. Critics feel that the police were suspicious of Diallo simply because he was a black man walking down the street after midnight.

There are all kinds of examples. It can also be a black officer pulling over a white person. isn't that considered racial profiling.
