Many schools are now expecting 3 years of a foreign language. Some schools do not require this and some degrees do not find this necessary.
Your best bet would be to contact the university that you are considering. In some states you can receive an award of distinction on your diploma for taking 3 years of a language along with certain math and science requirements. It may help you to speak with your high school advisor as well.
Also, taking language in high school can help you in college. It seems to be much harder in college if you do not take it in high school.

3 years of any foreign language is good, but not a prerequisite for getting into a good college. Grades, extracurricular activities, community involvement, recommendations . . . you will need those.
Where are you applying to? University of Mexico . . . 3 years of Spanish might be required there (or at least fluency).

It doesn't have to be Spanish, but most schools require a foreign language if it was offered at your high school. Some schools only require two years, but most require three and perfer four. You could also do two years of one language and two of another if your high school offers more than one foreign language.
Virtually all college preparatory schools require students to study a foreign language for at least three years. There's a reason for that.

I'm sure taking a foreign language looks good to any college or university, but I don't think it is required. Certainly it doesn't matter which language you take.

Not necessarily.
But it helps to be, bi-lingual. In the future, you'll have more job opportunities.
