The flavoring would be completely different due to the air, water, surroundings of the area. But mexican food (the basics) can be relatively easy if you can import the main ingredients. You most likely would have to make your own tortilla's if not import the tortillas by the crate. Homemade of course is best, but in China... Who's gonna know.
Get a cook book, learn to make in bulk... Beef? Don't know how the beef is in China... Chicken... tons of those, just be sure to use healthy ones. I'd get started if I were you.
Remember the one man who planted 4 apple trees in China (true story), when China or the region of China had none? Now he's looking to be the #1 exporter of apples in the world. Under 10 years... look at that.
If you give the chinese people a chicken or beef burrito or some tamales... I guarantee you, you can be the Taco Bell of the Far East. The Chinese eat this stuff up. Billions of mouths to feed.

A lot of chinese restaurants have mexicans in the kitchen, it seems only appropriate to reverse the roles.
