"you" not "yourself". And here is the REASON:
"Yourself" (as also myself, himself, etc.) has two uses:
1) as a "reflexive" form "-self" is the object, usually with the related simple pronoun stated as the subject. For example: "It sounds odd when you talk to yourself".
2) as an emphatic, used along with the simple pronoun (to emphasize that the person did indeed do something, or that they did it all alone. Example: "You said it yourself"/ "You yourself said that."
In your sentence, "you" functions as a simple object, and there is no reflexive action.... so no need for "yourself"

It definitely wouldn't be anything with "yourself" in it. Any reflexive pronoun has to refer back to the same person, like in these sentences:
"You are talking to yourself."
"He hurt himself."
"I like to eat myself. Does that make me a cannibal?"
"We need to go to college to better ourselves."
In each case, the -self word refers back to the subject of the sentence. Therefore, "yourself" cannot be used in your sentence, because it doesn't refer back to "I".
Your final sentence - "After speaking with you and Bob, I am confident that I would enjoy it." is the correct choice. Then again, the sentence is still a little stiff and may be due for a total rewording.

the rule that I always use is pretend that Bob is not there. The sentence would be After speaking with you I would enjoy it.
Or after speaking with Bob I would enjoy it.
Do not use yourself in that sentence.

Bob and you should be illustrated, and not you and Bob.

"After speaking with you and Bob, I am more confident that I would enjoy it" is the correct way. You don't need "yourself", unless you are implying that s/he see something personally.....that is in person.

the ONLY time you use the "-self" words is when you are talking about doing or saying it to oneself (such as he said it to himself, you are saying it to yourself, I said it to myself, I gave myself a kick in the shin, they gave themselves an "F" for messing up the assignment, etc.)
Substitute the pronoun into the sentence (without the "-self") and omit the the second person and see if the sentence makes sense.
For example, you would probably agree that your sentence would NOT make sense if you said, " After speaking with yourself, I am confident", but that it would make sense to say "After speaking with you, I am confident."
See how easy that is to figure it out?
