I'm making a bartop and am done sanding and filling the seams and knotholes. I want to paint and clearcoat it in vibrant colors but I don't know if i should just triple coat it in Killz or get an epoxy primer or gel coat.

A gel coat makes an excellent bar top. If you want vibrant colors first, then use an exterior oil base primer with a cover coat of the colors of your choice. If there are discolorations in the plywood that look as if they would bleed through the primer, use kilz primer sealer. All of these products can be bought at any homestore or lumber and hardware supply.

They are all good, If smell or clean up are an issue there are great latex primers out there.
