Simple. There is a RULE that says you underline the titles of books. It is part of the grammar you learn when you study English.

It's a polite thing. You wouldn't want people to go around not capitalizing your name, would you? Well, the author doesn't want people going around just letting their title hang out in the middle of space. Plus, if you think about it, the underline makes it look like it's on a shelf, and what are books mostly placed on?

It's just a punctuation convention. Books are underlined, short stoies go into quotes etc. Periods are used at end of declarative sentences etc. Just 'cuz we've always done it that way.
