Take the following steps:

(1) Read books.

(2) Study food, food culture, restaurant, local culture of the geographic area, how certain food/meal/drink is prepare/cook.

(3) Eat, taste, and enjoy.

(4) Record, reflect, and study a little bit more about the meal.

(5) Write your critic, your observation, your experience, what you have learn, and your opinion.

(6) Repeat steps 1 to 5.

You'll have to work for a newspaper or magazine, places like that. You will also have to be willing to eat mostly anything, which is why I could never do that. (ugh, seafood!) And most of all, you will have to be a good writer! Try asking your local newspaper, if it is a small-town newspaper, if you could write a column for them. Submit some reviews you've already written up.

start a blog and post your critiques of restaurants. Then when you get enough of them under your belt, you can use that on your resume and see if you can get a job working for a paper or something. Check the job listings and see if there are jobs out there and see what the requirements are. Then you can work on getting qualified.

Go to your local paper, ask about contact information on a critic/communist, and ask them how to get started and where to start
