What you're describing isn't security, it's protectionism. The security firms are promoted by the insurance companies. So, if it's commission you're after, you're better off working for the insurers, then you take a cut on the policy value and an introductory thank-you from the security firm as well.

Protectionism can pay better, but the risks are higher. Arson is only one of the skills you'll need.

Which of the two career options will suit you more depends to a large extent on the sort of reference you managed to get from your former employer yesterday. If possible, it's better to get into insurance first. If you don't like it then you can always move into protectionism later, and in the meanwhile, you'll have picked up a lot of inside information that will make your CV more attractive.

As for the rest of your question, it's a very mature and highly developed marketplace with specialities in all fields, so you should have no trouble in satisfying kosher, halal or even vegan requirements. Or you could, of course, take sandwiches.
