If you are writing long quotes or passages in an essay, it is common practice to use "block quoting" where the text is single spaced and has bigger margins to appear as a block of text.

Additionally, we use single space in grad school all the time when we are turning in non-essay assignments. Double space is really there so that there is space for teachers and TA's to write comments between the lines.

While we frequently abuse the privilege of "double space" to make a short paper much longer, they alleviate this problem in English schooling systems by just putting a word requirement. Instead of 5-7 pages, it will be 3000-4000 words :)

I think spelling is more important than spacing. (hint hint)
