Depends on what you are making, instant works better for cassaroles, and regular with everything else.

Instant is faster but dont taste as good as the real thing!!What does taste better than the real thing anyways?

For mashed, I continuously use on the spot. My prominent is with fat-loose cream cheese particularly of milk and buter; it is wealthy and creamy and you would be able to upload issues like dry salad seasonings.
