As long as there are no seedheads showing, it's okay to mulch. More depends on your level of tolerance to bunches of grass - if you go too long between mowings, most mulching blades don't cut as finely as wanted for it to drop thru to the soil. Also, if it is wet when you cut, more likely to clump.
Reason you don't mulch when it is putting up seedheads is more for the aesthetics than anything else. coarser blade, more noticible in the lawn.
Healthier for the lawn if you mulch as much as possible. returns the nitrogen / nutrients and all the organic matter back to the soil.

If your mower is "mulch ready" you should only mulch when you are cutting off only 1/3 rd of the blade of grass ( 4'' blade minus 1/3rd equals 1.32" .That means cut off a little more than 1 1/4".Anymore and the blades will not be chopped as fine to allow to form mulch.If the grass is WET,do not mow.If the grass grows taller to the point where as you will have to cut off more than 1/3rd I would use a bagger.If you mow regularly,and mulch each time,The grasses will break down in as little as 2 weeks to start providing nitrogen BACK into the soil.A wonderful cycle and free fertilizer!Check the blades @ every 6 mos to make sure there are sharp and balanced.

Mulch until the clippings start to build up on the lawns surface. Then bag it once, and not again till it starts to build up.
Bag when the leaves fall - it's a lot easier than raking and some of the chopped up leaves will fall through to the lawn to decompose. Keep the bagged grass/leaves in a compost bin - it's a good mix of green and brown already broken up and mixed.

The reason you use a "mulching mower" is so you do not have to bag. The blade cuts the grass very finely(assuming you keep it sharp) Some people bag regardless BUT if you pay someone to put "stuff" on your yard and you use a bag every time; you are removing the "stuff" you are paying them to apply...or "stuff" you apply.
