The term was invented by Volkswagen when they first introduced the Golf GTI. The GT comes from the Italian 'Gran Turismo' and the I for Injection, as in fuel injection.

I think it came from the earlier GT standing for Grand Tourer which was usually a souped up and better spec version of the standard saloon.

Then low and behold injection engins became fashionable so the added the 'i'

It is interesting that VW used 'i' for injection when the German is Einspritz - as in Mercedes 200E
