To understand why Darth Tyranus and Darth Vader offered the betrayal of their master, Palpatine, to Obi-wan, Padame, and Luke Skywalker you have to understand Sith philosophy:

"Without strife, your victory has no meaning. Without strife, you do not advance. Without strife, there is only stagnation."

"What fuels your power with the Force, but your passion? The stronger, darker emotions: Anger, hatred, fear . . . these passions empower us."

"Treachery is the way of the Sith." — Darth Tyranus

The Code of the Sith:

Peace is a lie, there is only passion.
Through passion, I gain strength.
Through strength, I gain power.
Through power, I gain victory.
Through victory, my chains are broken.
The Force shall free me.

However, not all emotions were embraced by the Sith. They, like the Jedi, considered "love" a dangerous emotion, but for different reasons. The Jedi discouraged love because it led to attachment, but the Sith taught that love led to mercy which was anathema to them.

Before the rise of Palpatine and Darth Vader, the Sith, thousands of years ago, had established various Sith empires and brotherhoods which were bent on defeating the Galactic Republic and Jedi Order. The Sith were almost successful in their pursuit of ultimate power in the galaxy. However, the Sith's greed for power, jealousy, and infighting doomed these organizations to failure.

Darth Bane, one of the last surviving Sith Lords, instituted a "golden" rule. "The Rule of Two" was a way to insure the Sith's survival and to eliminate the anarchy within.

"Two there should be; no more, no less. One to embody power; the other to crave it." — Darth Bane

The Rule of theTwo instituted that a master train an apprentice. Once the apprentice was fully trained, he would kill the master and take on the mantle himself and repeat the process. The death of the master is either a ceremonial killing or an assassination.

The Rule of Two allowed the Sith to escape detection by the Jedi order and secretly rebuld their strength. A millennia later, Darth Sidious, perhaps the strongest Sith Lord of all time, used treachery, deceit, and patience to bring about the end of the Jedi and the reestablishment of a Sith ruled Galactic Empire.

However, Palpatine failed to consider that Darth Vader's love for his son was stronger than his devotion to the dark side. Ironically, Darth Vader was only following the Rule of Two that Darth Bane had established a 1000 years earlier.

"A Jedi gains power through understanding, and a Sith gains understanding through power."

Because the Sith system of rule has only place for 2 people, The Master and the Apprentice. For the Apprentice to become the Master, he must overthrow the current one to show he is stronger and get his own Apprentice

Errrrrrrrrrrr................ What?

Because it's a movie series where good defeats evil and everyone (ish) has good in their hearts at some point, and the emperor is the symbol of all evil in this fictional universe, devoid of any redeeming features whatsoever, and therefore a legitimate target, the downfall of whom allows us all to feel better about ourselves and get some catharsis through the emotional medium of the cinematic experience?

That and the bastard wears black too!!!
