I find most Earth Sciences interesting, but Geology is probably my favorite. Meteorology is good, as well as Climatology. Oceanography is fascinating and so is Vulcanology (since I live near Mt. St. Helens).

"Climatology is the study of climate, scientifically defined as weather conditions averaged over a period of time, and is a branch of the atmospheric sciences. In contrast to meteorology, which studies short term weather systems lasting up to a few weeks, climatology studies the frequency with which these weather systems occurred in the past. It studies the periodicity of weather events over years to millennia, as well as changes in long-term average weather patterns, in relation to atmospheric conditions. Climatologists, those who practice climatology, study both the nature of climates - local, regional or global - and the natural or human-induced factors that cause climates to change. Climatology considers the past and can help predict future climate change."
I think this has the most potential for necessity in the future which means "job security".

My totally biased and unabashed opinion is geology.
It has so many sub-branches; paleontology, seismology, vulcanology, sedimentology, glacial geology, etc.
I have been an exploration geologist (coal, oil ,and, natural gas) and I am now a geologic mapper. Not a bad career for 35 years.

Meteorology and/or Oceanographic Geology. That's what I should have gone to grad school for instead of getting my MBA.
