i want the head to come out, when i cut the head off and paste it onto another paper(or whatever that white sheet is called in computer language) and paste it again into microsoft word, a "WHITE" a white background comes out...

A couple ways -

Click under help and then on the menu you'll see make background transparent (or something like that, not at my computer to be certain). That does it automatically. Be sure to select eps format.

I usually unlock the background (double click the lock in your layers pallette) or make sure I only have 1 layer. Then I select what I want to keep with the lasso, marquee or magic want, select inverse and hit delete. (you can also use your eraser tool for this once you deal with the layers) You need to have a eps or gif image for the transparency to show.

More recent versions have the save for web option under the File menu- you can click this and select the gif option on the right. Click transparent background and save. This will not noticably affect your resolution.

I don't work with Word too much, but work with Photoshop alot. There are many ways that you can do it, but this may be the easiest:
Open the image in Photoshop. Duplicate the layer. Hide the bottom layer and delete what you dont want from the top layer. You should see the transparant boxes underneath. Make sure it is in RGB mode and save the file as a PNG. Insert into Word.

Right-click the Eraser icon and select "Background Eraser". Use "Select > Color Range" to select the white background and erase away.
