When David Brent is introducing everyone in the office and says something along the lines of "This is Dawn......and everybody likes to get up at the crack of Dawn"
also, not a quote but when Gareth is going on to Tim about how he could beat anyone at Top Trumps and how he's not having his sloppy seconds because he realises Tim likes the new girl in the office too!

Brent asking the Asian guy in the office to demonstrate his brilliant impersonation of someone - I forget who - to the new guy, in Episode 1. The Asian guy looks puzzled and says that he doesn't do an impersonation.
Brent: [remembering]...Oh yeah. No, that's the other one.
Asian guy: [smiling but annoyed] The other one? The other what? You mean 'the other Paki'?
