I've seen two coaches appear in those commercials, though there might be more. They've used clips of Dick Vermeil and Bill Walsh that I've seen.

Dick Vermiel is the younger looking one and Bill Walsh is the one who looks like someones grandfather. Vermiel is an older gentleman too don't get me wrong but he looks good for his age compared to Bill Walsh.
