In a man, the two pieces fo cartilege that develop at the larynx intersect at a 90 degree angle. In a woman, the angle is 120 degrees instead, making for a less sharp protrusion. It's there in a woman, too, but much less pronounced in most cases. The Adam's apple, more properly called the laryngeal prominence, serves a function in deepening the voice, which is part of why it's a male characteristic. It also causes the adolescent male's voice to crack.

men and women have the same cartilage that makes up the adam's apple, but in men it is shaped into a sharper angle so it appears more prominent.

Actually, woman, too have the Adam's apple, but it is much thicker and non visible.

Because in women it's called an Eve's apple and is less pronounced, just one of those genetic differences like genitals really.
