In most recent homes, the direction of the joist will follow the slope of the roof line. Spacing will be 24" apart for new homes and 16" for older homes.
Stud finders will only work on smooth ceilings. On textured ceilings you can tap on the ceiling & listen for the sound change to find the ceiling joice. Use of a fine nail or stiff wire to test for the exact location will zero in on solid wood. Repair small holes with spackle.
Use molly type bolts or anchor holders for hanging light weight fixtures in between beams.

Like most everyone says, use a stud finder.

If you don't have one you can use an electric razor. Turn it on, slide it across the wall. You will hear a pitch change when you cross over a stud.

Good Luck.

you could probably use a stud finder, the newer ones are very accurate and inexpensive. you could try to find a ceiling stud or rafter and measure over by every 16 inches but that doesn't always work out.

Use a stud finder. You can buy one for about $25. I bought one last week, haven't tried it out though. Home Depot guy said the $17 one doesn't work that great.
