Small bubbles of gas surrounding your joints are popped. This is where the usually audible sound comes from. Cool, eh?
EDIT: I've noticed a lot of people claiming that cracking your knuckles can/will lead to arthritis. This is a popular old wives tale, but nothing more. It's been disproven several times. It's pretty easy to research, if you'd like to spend the time Googling the subject.

Cracking your knuckles used to be thought to lead to arthritis but it doesn't it's actually just the sound that the air bubbles make as they escape the synovial fluid on your joints make:
When you crack your knuckles, you're essentially pushing the joint into or out of its normal position. A thick, clear lubricant called synovial fluid is found in the joints between your bones. When you crack your fingers, you cause the bones to pull apart, and the pressure on the synovial fluid is reduced. Bubbles form and quickly expand and then burst. Snap, crackle, pop go your knuckles!

The reason why knuckles and any joint crack is to do with air bubbles in the surrounding area,it happens to all off us,nothing to worry about.

Well it depends what youre cracking them on, if it's someone's face then I guess his face splatters, he gets a black eye and a bloody nose, he calls the police and you get banged up.
