By this, I mean snail mail, not e-mail. What happens to it once the post office gets it, and what do they do to get it to the specific place we wanted it sent?

depend what kind of mail you send letter, flat envelop, parcel post. As soon as your mail accpet, the mailclerk or mail handlers seperated your mail in kinds like above, and depend your destination zip
If your mail is a letter size, they have to go through DBCS machine that read your address code. that is a fast machine with average 36000-40000 pieces/hr
if your mail is a flat, they have to go through ASFM 100 flat machine
if your mail is a parcel, it read by APPS machine
the optical reader read your address and go to the bin that contain the destination address and ship out by designation
