Been there, not sure if my cell phone was tapped or not because my home phone was!
On the land line I couldn't hear it but whoever was on the other end of the call could hear a beep or pause noise every 15 or 30 seconds. I called the phone company who had me read in the front of the phone book how to identify a phone tap then they told me it was tapped but they couldn't tell me by who!
I called Nextel to ask them if my cell was tapped and they said they couldn't tell but it was possible and that my text messages were being confiscated. Later an investigator from the D.A.'s office showed me a couple pages of text messages they took from the phone service!
People think this stuff sounds too far fetched but it's not!

ALSO, I found out through all of that what it is when someone's wearing a "wire". I thought it was like you see on movies where it's taped to their chests or whatever, but my ex wore a wire against me twice and never said a word to me! When the D.A. arrested me he tried to play the recordings for me but I refused to listen to them. I got out and asked my ex and he admitted doing it and said one of them looked like a cell phone and the other looked like a pager and that the guy listening in was in a car nearby!

In the movies you hear landlines being tapped, ect. In reality this is usualy not the case. In the case of cell phones, they can take the signal right out of the air, and will be able to hear you but you won't be able to hear them. On a landline they have to go through the phone company, but they would always stay connected, meaning that unless they activated the tap when the person was on the phone, you would hear nothing. A tap is so they can hear you only, you can't hear them.

With modern technology, you probably wouldn't know. Older bugging technology would sometimes have extra clicks or pauses when you first pick up your phone.
