When I was in college, I worked in retail sales (PACE Membership Warehouse) and found that Many customers treated employees like sh-it!
They would say things to us that would get them beaten up had they said the same things to any person on the street!
I remember what it was like to be on the receiving end and will never do that to hard working grunts!
Let me add on more thing; The Reason people are rude to low level service providers is because they Know that in Most cases, the store, chain or restaurant has that Infamous policy of the customer Always being right. They Know that they can talk trash to someones face and if anyone Dares to fight back, they can go to management and complain and probably get the worker fired.
So the Whole point to this is it's usually the fault of the company you work for that creates the environment conducive to Rude A-ssholes because that company is Too scared to let a $Dollar walk out the front door!

Sometimes..it is the other way around. I am black and own a business I get a double take and questions from Bank tellers, Waiters and waitresses give me a second glance because I am black and I tip very well. I do understand your question though. People should be treated with respect, but customer service is crucial to the productive growth of any establishment

People who have tendencies to manifest rudeness toward those you have mentioned above, might not be getting the correct service they expected. Or something was not satisfied in the course of rendering service to you, hence the rudeness.
Generally, you only get to be rude to someone when you feel that you were shortchanged of your expectations, of if they said something so wrong that totally displeased you. In return, you will surely get to be rude.
However, being rude to waiters or waitresses is not really a good idea because you'll never know what they'll do to your food. So instead of being rude, I suggest calming down and letting yourself express what you really want in a nice way so that they don't get to fire back at you by means of doing something nasty with the service about to be rendered to you.

As I am in the retail business, it infuriates me the way service people are treated. For some reason people believe they have the right to be rude.
Lucky me, I'm the store manager so I can (and DO) tell them to put their money back in their pocket and get their sorry behinds (not as polite) out of my store and stay out.
I also stand up for the servers in other places of business too. I don't care if they throw me out.

They have a low self-esteem, and or they have had a bad day and so they like to take it out on the other's that come in their path for the rest of the day.
