You don't have to. In fact, I think the phrase call it a day is used most often when people are leaving work, around 5 pm.
I think it means that you have done enough work to call it a day so now you can relax!
Some people use it to mean good night though.

I don't . When I'm done working I call it a day . Before I go to bad I call it a night .

I'm not sure, thats like cargo on a ship and shipments going by car. we just all screwed up and backwards I guess.
