We have a road leading to our house (approx. 3miles), Can I at 16 drive my mums car along it and back when they are away on holiday?
The fields either side of the track belong to us also. & its totally private eg. we dont live on a farm or anything like that.

If it is your land and the public don't have any right of way over it then it is OK. There is a private driving centre near me where under 17s can drive

However, what will your mum say if she finds out ?

It is NEVER legal to drive without a license or a permit (With a licensed driver of at least 5 years). If you were to have an accident (Even on a private road) your parent's insurance would not pay for any damages to their car!

Check your state's laws. You only require a license to drive on public or government maintained roads. So the answer is YES it is legal to drive on a private road that is bounded by private land.
