What causes them to change like that? What factors are involved? I don't like when they poke out. Even though I wear a bra they show through my shirt, even if it's a thick bra they still show. But then other times, they're completely flat. Some serious insight please! Guys need not even bother to answer.

The reasons, of course, are many, but, needless to say, it's an unconcious response to stimuli, such as cold, excitement, fear, anything that will raise your pulse, quite often will raise your nipples. It's common throughout humankind, not just females.
also, make sure that your bras are not adding to the problem, ie, if they are coarse inside the cups, they're going to add to your stimulation, which, of course, has the increased negative effect.

The cold,heat,menstrual cycle,stimulation or/and excitement can cause them to stick out.I am a man and sometimes even just the friction from my shirt as i move about can make them protrude.You can tape them(nipples),get a special bra(custome) with enough padding but fits well,or just not concentrate on it and you will find that others will cease to after awhile also.Peace be with you.Respect, Will.

I understand your predicament. Although we all assume that nipples stick out only during arousal and being either cold or wet, mine do too.
I don't wear a bra a lot so it bothers me because then people can tell I'm not wearing a bra.
