Chimney is what I believe is correct and the smoke comes out of the top of the chimney, which is called a flue. There is a little metal door in the throat of the chimney (usually just behind the fire box) called a damper and it controls the flow of hot air and gases from the fire into the flue and out the top. When there is no fire and it is closed it keeps heat in your house from going up the chimney flue and helps keep animals (and Santa) from coming down the chimney flue into your home.
The fire box is the area where the fire is made, logs are placed to burn. The draft is the intake of fresh (usually from the inside of your home) air that the burning of the logs cause that makes the smoke rise up the chimney, past the damper and through the flue!

A lot of people say chimley or chimbley, but the actual word is chimney. (Some people also say chiminy.)
