You can mix salsa into it. I like it REALLY HOT but with a 9 year old, you can use mild. It really is good that way.
You can also chop up some sausage links and mix them in.
Add some frozen veggies and make primavera.
Mix tuna and some cream of mushroom soup in and have tuna casserole.

Chop up some hotdog and add the pieces at the end, or/andadd some veggies (peas, broccoli,etc) or chop up deli meat and add it in at the end.( roast beef deli meat in mackie cheesy (thats what my son calls it) is really good and ham too) Just be creative. Chop up some pieces of leftover ham and add 'em

Well, when you have the chance, you can add tuna, hamburger, or such, also, add tomatoes, without the cheese, or, you can add tomatoes and burger for a goulash type dish.
Just make sure that, whatever you add to it, doesn't make it dry, cause then you'll both lose interest..

Well, I like eating it plain, but my mother usually chops up some hotdogs and string beans into it to make it taste more better.
