If you are talking about the chemical element there is a story that it was discovered by a youthful Italian alchemist, Joseph Mercurio, who thought it might be useful in turning lead into gold. Not long after announcing its discovery he investigated its capabilities for turning carp into goldfish. He tasted a carp after painting it with the new mercury. He left no descendants so his claim went unnoticed for many years afterward until the flurry of interest in fish-containing -mercury. It may have been discovered earlier in ancient times by an even older alchemist whose name is unknown but if you want to put a name next to it go with Joe Mercurio..

i'm pretty sure the planet mercury (if that's what you're refering to) has been known since the ancient greeks, if not earlier. probably much earlier, before recorded history...so trying to figure out the first person to see it would be extremely hard to say the least.
