If you're talking individual songs:
the Milton Berle Show version of "Hound Dog" - or the second or third take of "Heartbreak Hotel" on the Dorsey Bros show [where but the big band suddenly joins in during the instrumental verse, adding a bit of extra power in just the right place}.
If you're talking gigs:
track down a copy of "The Desert Storm", the last show in Vegas in the summer of '74. Suffice to say, the between-song monologues present a side of Elvis you've probably never heard before.
