Why do croutons come in airtight packages? Aren't they just stale bread to begin with?

If they weren't sealed in airtight packages they could absorb humidity from the surrounding air and soften....remember, ya want the "crunch".

everything comes in airtight packages - so that they stay crunchy, or fresh, or don't grow mold.
