Anyone know how to tell good quality jade from poor quality jade? How about real from fake? I'd like information on color as well...

This is a question that without writing a book and giving you several years of handling various jade samples is almost impossible to answer. You used the word "jade" this, however, covers two minerals, nephrite and jadeite. The colours range from nearly emerald green to white with shades of lavender, yellow, black and other tints on the way. It can be from nearly transparent to quite opaque and its structure from coarsely crystalline to cryptocrystaline with every grade in between. Your best bet is to take what ever you have to an expert for advice. This may cost you something but believe me trusting to your own judgment can cost you so much more. I am sorry to be so negative but I am only passing on what 40 years as a precious stone trader has taught me.

Jade Quality basically covers four qualities
Tone and color: This describes the specific quality of a color grade. The finest colors are penetrating and vivid. They should be pure and evenly distributed.

Translucency and clarity: Ranges from near transparent to opaque. The highest quality has a consistent clarity like honey.
Texture : Ranges from fine to coarse The highest quality is clear and free of impurities.
Cutting : The shaping of the jade
